Whole Wheat Penne with Chicken Sausage and Veggies

ingredients
  • 1 red container chicken sausage links, cut into pieces (about 1 1/2 sausage links. I used a delicious basil and sun dried tomato sausage from Aldi. :) 
  • 1/2 green container zucchini 
  • 1/2 green container summer squash 
  • 1/4 green container cherry tomatoes, sliced
  • 3/4 green container spinach 
  • 1 blue container fresh shaved parmesan cheese
  • 1 tea extra virgin olive oil 
  • 1 yellow container whole wheat penne pasta 
  • italian seasoning 
  • garlic powder 
  • fresh basil
instructions
  1. Heat 1 teaspoon olive oil in a pan over medium-medium high heat. 
  2. Add chicken sausage, zucchini, summer squash, and tomatoes to pan. 
  3. Add garlic powder and italian seasoning to the veggie mix (to taste). 
  4. Cook pasta.
  5. Sauté veggies and chicken mix until veggies are tender. 
  6. Add spinach and continue to cook until spinach is sautéed. 
  7. Top with fresh basil and parmesan cheese.
