Unwrapped Chicken and Cheese "Manicotti"


ok, ok, ok before you wonder if I have lost my mind, I am aware of the fact that this is not actually "manicotti." But this delicious pasta dish TASTES just like it, is 21 day fix approved, AND is way easier to make (a win, win, win!!!) The ricotta cheese adds a delicious creaminess to this dish that I love and hope you do too! The chicken in this simple dinner can be prepared anyway that you like. Nick smoked 2 whole chickens this past weekend so we used the left overs for this, but you could bake, grill, or boil the chicken as well. Enjoy! 


Unwrapped Chicken and Cheese "Manicotti"

ingredients
  • 1 red container chopped boneless, skinless chicken breast (Cooked anyway you choose).
  • 1/2 red container ricotta cheese 
  • 1 yellow container whole wheat penne pasta 
  • 1/2 purple container marinara (I used Aldi, Basilico because it had the least amount of sugar!) 
  • 1/2 blue shredded parmesan cheese
instructions
  1. Cook chicken.
  2. Boil pasta. 
  3. Heat marinara sauce. 
  4. Top cooked noodles with chicken, sauce, ricotta, and shredded parmesan. 
  5. Enjoy! (See, I told you this was an easy one! :)
