Blackened Salmon with Avocado Topping
Holy delicious! I've been digging on this recipe (or a similar one) for a couple years now.
I've made a couple tweaks to 21 day fix approve this meal, but for the most part, we can thank my mother in law for this one! :)
Blackened Salmon with Avocado Topping

ingredients
- 2 4 oz salmon filets
- 1/2 avocado
- cherry tomatoes (3/4 green container, or about 1 cup)
- red onion (1/4 green container, or about 1 cup)
- 2 teaspoons extra virgin olive oil
- 2 teaspoons garlic powder (or to taste)
- Blackening seasoning (garlic powder, paprika, pepper, dash salt-all to taste)
instructions
- Season salmon with blackening seasoning
- Grill salmon
- Slice avocado into bit size pieces.
- Cut cherry tomatoes in half.
- Dice red onion.
- Combine avocado, tomatoes, and onion in a bowl.
- Add olive oil to the avocado mixture.
- Add garlic powder to the avocado mixture (to taste).
- Top grilled salmon with avocado mixture.
