Blackened Salmon with Avocado Topping


Holy delicious! I've been digging on this recipe (or a similar one) for a couple years now. A LOT MOST of what I know about cooking I have learned from watching my mother in law. She is an AMAZING chef! (If you've had the pleasure of spending the weekend at the lake house you know what I'm talking about.) Everything she makes is delicious and (usually) nutritious as well. This recipe is no exception. The salmon is the perfect, meaty fish and is complimented by the hearty avocado topping. 

I've made a couple tweaks to 21 day fix approve this meal, but for the most part, we can thank my mother in law for this one! :) 


Blackened Salmon with Avocado Topping
servings: 2

ingredients
  • 2 4 oz salmon filets
  • 1/2 avocado 
  • cherry tomatoes (3/4 green container, or about 1 cup)
  • red onion (1/4 green container, or about 1 cup) 
  • 2 teaspoons extra virgin olive oil 
  • 2 teaspoons garlic powder (or to taste)
  • Blackening seasoning (garlic powder, paprika, pepper, dash salt-all to taste)
instructions
  1. Season salmon with blackening seasoning
  2. Grill salmon 
  3. Slice avocado into bit size pieces. 
  4. Cut cherry tomatoes in half. 
  5. Dice red onion. 
  6. Combine avocado, tomatoes, and onion in a bowl. 
  7. Add olive oil to the avocado mixture. 
  8. Add garlic powder to the avocado mixture (to taste).
  9. Top grilled salmon with avocado mixture.
